Banana Chocolate Chunk Coffee Muffins

This delicious banana muffin recipe was shared with us by guest co-host, Megan Gaul. As a kid, when her mom baked these muffins, Megan knew something special was happening, like visitors were expected or their family was headed on a road trip. Whether for a special occasion or everyday snacking, these muffins hit the spot.

Cook time: 25 - 30 min

Yield: 12 muffins





Ingredients

  • 2 1/2 cups all-purpose flour

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1 1/2 cups mashed ripe bananas (about 3)

  • 1 tbsp hot water & 1 tbsp instant coffee

  • 1 cup butter

  • 1 1/4 cup granulated sugar

  • 1 egg

  • 1 cup dark chocolate chips or chunks

  • 1 cup chopped walnuts


Directions

  1. Pre-heat oven to 400F.

  2. Mix hot water and instant coffee together in a small bowl or cup and set aside.

  3. Mix together flour, baking powder, baking soda and salt in a medium bowl and set aside.

  4. In the bowl of a stand mixer, beat together butter and sugar until fluffy. Beat in egg, then add in mashed bananas. Pour in the coffee & water mixture.

  5. Add dry ingredients to the wet and mix all together, batter will be thick.

  6. Fold in chocolate pieces and nuts.

  7. Divide evenly into muffin tin. Makes 24.

  8. Bake in pre-heated oven for 25-30 min or until toothpick inserted into centre comes out clean. These muffins tend to be dark on the outside and nice and moist inside.
