Create this creamy stroganoff from leftover beef for a satisfying, budget friendly meal that comes together quickly and can feed a family on a busy weeknight.

Yield: 4-6 servings
Ingredients
2 tbsp cooking oil
2 tbsp unsalted butter
4 cups brown cremini mushrooms, quartered
1/2 large onion, diced
1/4 cup white cooking wine
2 lb cooked beef, cut into cubes
1 1/2 tbsp all-purpose flour
1 1/2 cups beef broth
1 tsp dried thyme
1/2 tsp salt
freshly ground black pepper
1/4 cup sour cream
1 tbsp dijon mustard
Directions
Heat a large pot over medium-high heat. Add oil and melt butter. Add the mushrooms to the pot and sauté until they become golden brown and start to sweat a bit. Then add in the diced mushroom and turn the heat down to medium. Sauté the onion and mushrooms until all the moisture has released and evaporated in the pan and the onions are turning translucent.
Add the cooking wine to the pot and scrape up any brown bits stuck to the bottom of the pot using a wooden spoon. Continue to cook and stir until the wine has reduced by about half.
Add the beef and stir everything in the pot together. Sprinkle the works with flour, thyme, salt and pepper. Stir to coat everything evenly, then add in the broth. Bring to boil and then reduce heat to medium-low and allow to simmer until the sauce begins to thicken and the meat is heated through, about 10-15 min.
Stir in the sour cream a few minutes before serving & cook for a couple minutes before removing from the heat and adding the dijon mustard. Adjust seasoning by stirring in more salt and pepper to your own taste preference.
Serve over egg noodles.
