A drinking vinegar (called a shrub) gives your cocktail a refreshing zing!
Shake with ice:
2 oz blackberry lemon shrub
2 oz bourbon
Pour into a glass with ice and top up with
2 oz soda / tonic water
This can be non-alcoholic by simply mixing equal parts shrub with soda.
Make the shrub 3 - 5 days in advance.
1 pint blackberries
2 large lemons
1 cup sugar
1 cup vinegar
Zest the lemons and add the zest to the sugar, mix.
Put the blackberries into a tall jar, and use your hand to squeeze the lemon juice into the jar with the berries. It does not need to be fully juiced.
Slice the meat of the lemons and add that to the jar as well (no need to waste the fruit, but you don't want the peel in your shrub).
Add the sugar and zest mixture into the jar and muddle the fruit + sugar to break down those berries a little bit.
Pour in vinegar, put the lid on the jar and store in your fridge for 3-5 days. Give it a shake now and then.
Strain the shrub (syrup) when you want to use it. And eat that fruit!
