Creative Grilled Cheese Sandwiches

A simple grilled cheese sandwich can be taken to the next level of flavour with just a few ingredients that you probably already have kicking around in your fridge or pantry. Here's a few recommended variations on this classic, hot lunch sandwich.

Grilled Cheese No. 1

  • aged white cheddar cheese

  • gruyere cheese (optional)

  • caramelized onions

  • grainy mustard or dijon mustard

  • salt & pepper

  • olive oil


Grilled Cheese No. 2

  • aged white cheddar cheese

  • feta cheese (optional)

  • diced green olives

  • diced sun-dried tomatoes in olive oil

  • chili flakes

  • dried oregano

  • ground cumin

  • salt & pepper

  • olive oil


Grilled Cheese No. 3

  • aged white cheddar cheese

  • mozzarella cheese (optional)

  • diced roasted red pepper

  • chopped fresh parsley

  • red wine vinegar

  • garlic powder

  • chili powder

  • salt & pepper

  • olive oil


Directions

  1. Chop up cheese into small, thin chunks and combine with your desired ingredients. Mix and let sit for a few minutes on the counter as you bring your pan up to heat or place in a sealed container in your fridge and let sit overnight.

  2. Bring a cast iron or non-stick pan on the stove and heat over medium-low.

  3. Take two slices of bread and butter one side on each.

  4. Once the pan is warm, place one slice of bread, butter side down, on the pan. Spoon the desired amount of cheese mixture on the bread and cover with the second slice of bread, butter side up.

  5. Allow the bread on the pan to turn crispy and golden brown before flipping. Grill the other side of the bread until the cheese begins to melt out the sides and the bread is golden brown and crispy.

  6. Remove the sandwich from the pan and let sit for 2 min before slicing in half. Serve hot.

    • About 1 tbsp of diced vegetables

    • Around 1/8 of seasoning
