Grandma's Green Jello Salad

Take a trip down memory lane with this crunchy & sweet lime jello salad that so many people remember eating at their Grandma's table. Share this tasty memory forward to the next generation!



Prep Time: 15 min

Set Time: 2-4 hrs

Yield: 4-6 servings

Ingredients

  • 1 pkg lime Jell-o

  • 1 cup water

  • 1 can crushed pineapple

  • 1/2 cup carrot

  • 1 cup cabbage


Directions

  1. Grate the carrot and cabbage and set aside.

  2. Open the can of crushed pineapple and drain the liquid into a measuring cup. If less than 1 cup, top up with water. Then add to a medium saucepan along with 1 cup of water. Reserve the crushed pineapple for later.

  3. Heat the water and pineapple juice over medium low heat. Add the package of lime jello to the saucepan and stir until dissolved. Remove from heat.

  4. Mix together the carrot, cabbage and pineapple in a small bowl or baking dish. Pour the jello mixture over the veggies. Cover and refrigerate until set.
