Nancy's Mom's Special Chicken

This sweet chicken recipe was shared by our guest, Nancy May, from the Family Tree, Food & Stories Podcast. Her mom would always make it for special occasions.

This is the sort of recipe that is more of a guideline. First of all, it'll depend on how many people you're feeding (and therefore, how many pieces of chicken you need).


Ingredients

  • Chicken breast or thighs

  • Approx. 1 cup all purpose flour

  • Oil, for browning chicken pieces

  • 1 jar apricot preserves

  • White wine

  • Pine nuts or similar nuts which will soften with cooking

  • Salt and pepper to taste


Directions

  1. Preheat the oven to 350°F.

  2. While the oven is heating up, heat a skillet to med/high, with enough oil to brown your chicken.

  3. Place chicken pieces in a plastic bag that’s filled with about 1 cup of flour, along with salt and pepper (add other seasonings if you like). Place your chicken in the plastic bag

    with the flour, and shake so that the chicken is completely coated. When done, place each chicken piece into a hot skillet, and brown lightly on both sides.

  4. When all of the meat is browned, place each pieces into a baking dish that’s large enough to contain all your chicken.

  5. Empty 1 jar of apricot preserves into a bowl and then fill ¾ of that preserve jar with white wine. Pour the white wine into the preserves and mix until both are combined, and the preserves are meltedand liquidy. Pour the entire mixture over your chicken, which is now in a baking dish.

  6. Bake for about 45 minutes at 350°. Serve over rice or anything you want.
