No-Knead Overnight Bread

A loaf of overnight no-knead bread with one slice on a wooden cutting board

Nothing beats the aroma of home-baked bread, fresh out of the oven. Except for when the bread makes itself while you sleep! Simply mix together all the ingredients the night before and then bake in the morning. You'll be in love with this crispy crust and moist interior!

Prep Time: 10 min

Additional Time: 12 hr rest

Cook time: 40 min

Yield: 1 loaf


Ingredients

  • 2 1/2 cups all purpose flour

  • 1/2 cup whole wheat flour

  • 1 tbsp flax seeds

  • 1 tbsp millet

  • 1 tbsp corn meal

  • 3/4 tsp salt

  • 1/2 tsp yeast

  • 400mL lukewarm water

Directions

  1. In a medium bowl, mix together all the ingredients using the handle end of a wooden spoon.

  2. Cover the bowl and let rest for 12 hrs.

  3. Pre-heat the oven to 425F

  4. Then, uncover and sprinkle with a handful of flour & punch down the dough. Scrape off the sides of the bowl, adding more flour as needed and transfer to a parchment lined bread pan.

  5. Bake for 40 min at 425F

  6. Remove from the pan and paper and allow to cool on a wire rack before serving.

Zhuzh it up!

  • Add you're favourite seeds and nuts to this bread to make it your own. Great alternatives include hemp seeds, sunflower seeds, pepitas, oats, cracked wheat - the options are endless! and so tasty
