Oleo-Saccharum (lemon syrup)

Oleo-saccharum is a delightful lemon syrup made with just two ingredients, lemon peels and sugar. You can use any citrus peels you like - try orange or grapefruit, or a combination!



Prep Time: 10 min

Cook time: 5 - 24 hours rest time

Yield: 2 ounces




Ingredients

  • 1 cup citrus peels, stripped with a vegetable peeler

  • 3/4 cup granulated sugar

Directions

  1. Peel lemons, removing as much of the white pith as you can.

  2. Combine peels and sugar in a bowl and mash with a muddler or wooden spoon.

  3. Cover the bowl and leave it alone for at least 5 hours, up to 24 hours.

  4. Strain out citrus peels by pressing them into a metal strainer. It is a slow process! Be patient and leave them to drip while you do something else. Store the syrup in a jar in the fridge for up to two weeks.
