Persian Love Cake

This delicious cake will wow your dinner guests with flavours of rose, cardamom, orange and saffron. They'll never guess it is so simple to make.


Prep Time: 15 min

Cook time: 30 min

Yield: 10" cake (approx. 8 servings)






Ingredients


Cake

  • 6 tbsp ghee or butter

  • 6 tbsp olive oil light

  • 1 cup sugar

  • 5 eggs

  • 1 cup thick Greek style yogurt

  • 2 tbsp rose water

  • 2 tsp green cardamom ground

  • 1 cup almond flour

  • 3/4 cup all purpose flour

  • 1/2 cup semolina flour

  • 2 tsp baking powder

  • pinch salt

  • 3 tbsp sliced or slivered almonds

Syrup

  • 1/2 cup honey

  • 1/3 cup orange juice

  • 2 tbsp rose water

  • 1/2 tsp saffron, ground

  • 2 tbsp pistachios slivered or chopped

Directions


Cake

  1. Preheat the oven to 350F.

  2. In a mixing bowl, combine oil and ghee together. Add the sugar and whisk it all together until creamy.

  3. Add eggs, one at a time and whisk it very well.

  4. Next add the yogurt and whisk it all together into a fluffy mixture.

  5. Add rose water and ground cardamom and stir it in.

  6. Add the almond flour, all purpose flour and semolina flour (sifting if necessary), one by one and lightly whisk it in.

  7. Sprinkle baking powder all over, add a pinch of salt and incorporate it very well into the mixture.

  8. Pour the cake batter into a greased 10 inch springform cake pan lined with parchment paper (or a bundt pan) in the bottom.

  9. Scatter the almond slices all over the cake batter.

  10. Bake at 350F for 30 to 40 minutes until it is golden on the top and a cake tester or toothpick inserted into the cake comes out clean.

Syrup

  1. While the cake is baking, prepare the syrup.

  2. Combine honey and orange juice and bring it to a boil.

  3. Lower the heat and let it simmer for about 5 minutes.

  4. Then stir in the rose water and ground saffron. Turn off the heat and add the pistachios.

One last step

  1. Using a thin wooden skewer poke fine holes all over the cake.

  2. Pour the warm syrup over the warm cake and let the syrup soak in for several hours or overnight.

Zhuzh it up!

  • Topping with dried rose petals would really zhuzh this one up!
