Cream cheese chips are the perfect pop of creamy sweetness tucked into a delicious pumpkin spiced muffin. The perfect treat to add to your lunch or as an afternoon snack.

Cook time: 15-18 min
Yield: 12-15 muffins
Ingredients
1 1/2 cups all-purpose flour
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp nutmeg
1/4 tsp baking powder
1 egg
2/3 cup brown sugar
1 cup pumpkin puree
1/4 cup cooking oil
Directions
Combine all the dry ingredients in a medium bowl and stir together. Create a well in the dry ingredients and set aside.
In a separate bowl, whisk together the egg, sugar, pumpkin puree and oil.
Add the wet ingredients to the dry and stir together until everything is combined and lumpy.
Use an ice-cream scoop to transfer the batter into a muffin tin.
Bake in pre-heated oven for 15-18 min or until a toothpick inserted in the centre of the muffin comes out clean.
Remove to a cooling rack.

If you haven't got pumpkin puree on hand, you can also use boiled, mashed sweet potato or grated zucchini.
Freeze a batch of muffins in an airtight container and pop into lunch-kits for an easy snack on the go.
