Pumpkin Muffins with Cream Cheese Chips

Cream cheese chips are the perfect pop of creamy sweetness tucked into a delicious pumpkin spiced muffin. The perfect treat to add to your lunch or as an afternoon snack.


Prep Time: 10 min

Cook time: 15-18 min

Yield: 12-15 muffins



Ingredients

  • 1 1/2 cups all-purpose flour

  • 1 tsp cinnamon

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1/4 tsp nutmeg

  • 1/4 tsp baking powder

  • 1 egg

  • 2/3 cup brown sugar

  • 1 cup pumpkin puree

  • 1/4 cup cooking oil


Directions

  1. Combine all the dry ingredients in a medium bowl and stir together. Create a well in the dry ingredients and set aside.

  2. In a separate bowl, whisk together the egg, sugar, pumpkin puree and oil.

  3. Add the wet ingredients to the dry and stir together until everything is combined and lumpy.

  4. Use an ice-cream scoop to transfer the batter into a muffin tin.

  5. Bake in pre-heated oven for 15-18 min or until a toothpick inserted in the centre of the muffin comes out clean.

  6. Remove to a cooling rack.


Zhuzh it up!

  • If you haven't got pumpkin puree on hand, you can also use boiled, mashed sweet potato or grated zucchini.

  • Freeze a batch of muffins in an airtight container and pop into lunch-kits for an easy snack on the go.
