Red Chimichurri

Chimichurri is an uncooked sauce used as an ingredient in cooking and as a table condiment for grilled meat. Green chimichurri is more common, but this red version is a nice alternative.

Prep Time: 10 min

Cook time: n/a

Yield: about 2 cups



Ingredients

  • 6 cloves garlic

  • 2 large shallots

  • 1/2 cup olive oil

  • 2 tablespoons red wine vinegar sub white wine vinegar in a pinch

  • 1/4-1/2 cup chopped fresh parsley or cilantro, or a mixture of both

  • 1 tablespoon sweet smoked paprika

  • 1 teaspoon chipotle chili powder

  • 3/4 teaspoon salt

  • 1/2 teaspoon cumin

  • 1/4 – 1/2 tablespoon red pepper flakes


Directions

  1. Add the garlic cloves and chunked shallots into a food processor. Pulse until it starts to get chopped, but not too much.

  2. Add the remaining ingredients and pulse until it is combined but still chunky.   

  3. You can make this ahead and refrigerate until you want to serve it - the flavours will get even better with a little time.


Zhuzh it up!

  • We enjoyed this sauce on Matambre, an Argentinian stuffed flank steak. It would also be great just scooped up with tortilla chips.
